Peruvian Flan

Ingredients

  • 2 cup Granulated sugar|Sugar
  • 1/2 cup water
  • ==
  • 6 x eggs
  • 1 x (12-ounce) can sweetened condensed milk|condensed milk
  • 1 x (12-ounce) can evaporated milk
  • 1 TSP vanilla

Directions

  1. To prepare sauce:
  2. Pour Granulated sugar|Sugar and water in a heavy saucepan and simmer over medium heat.
  3. Stir constantly about 8 minutes or until Granulated sugar|Sugar is golden.
  4. Pour hot caramel sauce into ovenproof pie plate or 8 inch round baking pan
  5. Let it cool completely.
  6. To prepare flan:
  7. Preheat oven to 350 degrees.
  8. Stir eggs in a bowl.
  9. Slowly add sweetened condensed milk|condensed milk, then evaporated milk.
  10. Add vanilla, blending well.
  11. Pour flan mixture over ovenproof dish coated with caramel.
  12. Carefully place filled dish into a baking pan.
  13. Bake about 40 minutes.
  14. Flan is cooked when a knife inserted in center comes out clean.
  15. Remove from oven.
  16. Carefully separate flan from dish with a thin knife and let cool.
  17. Invert on a flat dish and garnish with sliced strawberries, maraschino cherry or other fruit.
