Pina Colada Tofu Pie
Ingredients
- 1 regular or graham cracker crust Filling
- 1 pound tofu, cut up and drained
- 1 1/2 tablespoons vegetable oil
- 1/3 cup plus 2 tablespoons honey
- 1 1/2 teaspoons cornstarch
- 1 teaspoon vanilla extract
- 1 1/4 cups drained crushed pineapple
- 3/4 cup shredded unsweetened coconut
Blend all filling ingredients well. Bake in prepared crust at 350 degrees F for 20 to 30 minutes. Let cool to set.
