Chicken Rice Salad with Mangos and Cranberries

Recipe Description

Makes 6 servings


  • 3 cups cooked medium-grain rice
  • 1 x 6 ounce package pre-cooked chicken strips, cut into 1-inch pieces
  • ¾ cup dried cranberry|cranberries
  • 1 mango, chopped
  • ¾ cup choppped pecans, toasted
  • ¾ teaspoon ground black pepper
  • ½ cup raspberry vinaigrette dressing
  • ¼ cup plus two tablespoons fresh chopped parsley, divided


  1. In large bowl, combine rice, chicken, cranberry|cranberries, mango, pecans, pepper, vinaigrette and ¼ cup parsley.
  2. Toss well.
  3. Garnish with remaining parsley.
