Chicken with Tomato Sauce

Ingredients

  • 1 chicken, cut into pieces
  • 3 tbsp oil
  • 1 onion, thinly sliced
  • 3 large tomatoes, mashed
  • 2 stalks celery, cut into thin rounds
  • 1 tsp salt
  • 1 hot pimento or chile pepper|chili pepper

Directions

  1. Fry the chicken in hot oil until golden.
  2. Remove pieces and cook onions in the same pot.
  3. When they, too, are golden brown, return chicken pieces to the pot and add tomatoes, celery, salt and chile pepper|hot pepper.
  4. Reduce heat and simmer until chicken is tender.
