Praline Tofu Pumpkin Pie

Ingredients

  • 1 (9-inch) unbaked patty shell|pastry shell
  • 1 (12 oz) package firm silken tofu
  • 1 cup sour cream
  • 1 (15 oz) can pumpkin
  • 1 cup firmly packed brown sugar#About Brown sugar|light brown sugar
  • 1 egg
  • 1 Tbsp flour
  • 1 Tbsp pumpkin pie spice
  • ½ tsp salt

  • 1 cup chopped pecans
  • ¼ cup firmly packed brown sugar#About Brown sugar|light brown sugar
  • 3 Tbsp margarine, melted

Directions

  1. Preheat oven to 425 °F.
  2. In food processor or blender, combine tofu and sour cream; add pumpkin, granulated sugar|sugar, egg, flour, pie spice and salt. Process until smooth.
  3. Pour into patty shell|pastry shell. Bake 15 minutes.
  4. Reduce oven temperature to 350 °F; bake 40 minutes.
  5. Sprinkle with #Praline topping|Praline topping around edge of pie.
  6. Bake 10 minutes longer. Cool.
  7. Garnish as desired.
