Rice-Cheese Muffins
Recipe Description
Makes 12 muffins.Ingredients
- 2 eggs
- 1 cup cooked rice, cooled
- ½ cup milk
- ½ cup grated pimento cheese
- 1 cup sifted flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- Beat eggs until frothy. Stir in rice, milk and cheese.
- Sift together flour, baking powder and salt.
- Sift again into rice mixture.
- Stir until blended.
- Grease and flour muffin pan.
- Fill ½ to ? full of batter.
- Bake at 425 °F for 20 minutes.
- Serve immediately.
