Saffron Mushroom Rice

Recipe Description

Makes 6 servings.

Ingredients

  • 1 cup uncooked rice
  • ½ cup minced onion
  • 2 tablespoons butter or margarine
  • 1 x 4-ounce can sliced mushrooms with liquid
  • ¼ teaspoon ground black pepper
  • a pinch (1/16 teaspoon) ground saffron
  • 1½ cups beef broth
  • Parmesan cheese (optional)

Directions

  1. Cook onion and rice in butter in large saucepan until golden.
  2. Add mushrooms, pepper, saffron and broth. Bring to a boil; stir once or twice.
  3. Lower heat to simmer, cover, and simmer 15 minutes or until rice is tender and liquid is absorbed.
  4. Fluff with fork; sprinkle with Parmesan cheese, if desired
