Turkey Cheese Soup

Ingredients

  • 1 cup finely chopped green onions|green onion
  • 1 cup finely chopped carrots
  • 1 cup finely chopped celery
  • ¼ cup butter
  • ¼ cup flour
  • 2 cups turkey or chicken broth
  • 2 cups half-and-half
  • ¼ tsp salt
  • ? tsp white pepper
  • 5½ cups shredded cheddar cheese
  • 2 cups diced cooked Turkey meat|turkey or chicken

Directions

  1. Sauté the onion, carrots and celery in butter until soft
  2. Blend in flour
  3. Gradually stir in broth, then half-and-half
  4. Cook, stirring constantly until the mixture thickens
  5. Stir in salt, pepper, cheese and turkey
  6. Heat until the cheese just melts
