Tutti-Fruitti Rice Custard

Recipe Description

Makes 8 servings.

Ingredients

  • 1/2 cup Raisins
  • 2 tablespoons cream sherry
  • 3 cups cooked rice, divided
  • 2 1/2 cups milk, divided
  • 1/3 cup Granulated sugar|Sugar
  • 2 tablespoons butter or margarine
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped candied pineapple
  • 1/4 cup chopped candied sour cherry|red cherries
  • 3/4 cup chopped walnuts
  • 3 cups hot cooked rice
  • 1/2 teaspoon salt

Directions

  1. Combine Raisins and sherry; allow to stand 1 to 2 hours.
  2. Meanwhile, in saucepan combine rice, 2 cups milk, Granulated sugar|Sugar, butter and salt.
  3. Cook over medium heat until thickened, 20 to 25 minutes, stirring often.
  4. Blend eggs with remaining 1 cup milk.
  5. Add to rice mixture; cook 2 minutes longer.
  6. Stir in vanilla; chill. Add fruits, sherry and nuts.
  7. Spoon into individual dessert dishes. Garnish with additional fruit, if desired.
