Veg Soup

Ingredients

  • olive oil
  • 1 large sweet onion
  • 1 green bell pepper
  • 1 x 15 oz can of corn
  • 1 x 15 oz can of chili beans
  • 1 x 15 oz can of green beans
  • 1 x 15 oz can of navy beans
  • 1 x 15 oz can of black beans
  • 1 x 15 oz can of black-eyed peas
  • 1 x 15 oz can of diced tomatoes
  • 1 x 8 oz can of tomato paste
  • 8¾ cup barley
  • ¾ cup brown rice
  • extra-firm tofu

Directions

  1. Prepare the vegetables, prepare the liquid and cover the vegetables, boil the mixture, add rice and barley.
  2. Let it cook, covered, for 30 minutes, then add spices and tofu, boil the soup and after several minutes it is ready to be served.
