Warm Scallop Salad

Recipe Description

Using fresh Scallops is the key to this simple salad.

  • salt and freshly ground black pepper
  • ¼ cup olive oil
  • ½ cup green onions|green onion, sliced (2 green onions)
  • 2 tablespoons fresh lime juice (3 limes)
  • 2 tablespoons fresh cilantro, chopped
  • 1½ cups red bell pepper, diced
  • ½ cup corn kernels, fresh preferred
  • orange slices, for garnish (optional)
