Washington's Cherry Pie

Ingredients

  • 9" unbaked pie shell
  • 2 cup unsweetened cherry|cherries
  • ¼ cup soft margarine
  • 1 tbsp flour
  • ½ cup granulated sugar|sugar replacement
  • 2 egg yolks
  • ¼ cup evaporated milk
  • ½ tsp vanilla extract
  • 2 egg whites
  • 2 tsp granulated sugar replacement

Directions

  1. Drain cherry|cherries; pout into unbaked pie shell.
  2. Cream margarine, flour, and granulated sugar|sugar replacement.
  3. Add egg yolks and beat until smooth.
  4. Add evaporated milk and vanilla extract.
  5. Pour over cherry|cherries.
  6. Bake at 450 °F for 10 minutes.
  7. Reduce heat.
  8. Bake at 350 °F for 30 minutes.
  9. Whip egg whites until soft peaks form.
  10. Add granulated sugar replacement; whip until thick and stiff.
  11. Top pie filling with meringue, carefully sealing edges.
  12. Bake at 350 °F for 12-15 minutes, or until delicately brown.
