Watermelon ice
Ingredients
- 6 cup watermelon, peeled, seeded
- -and cut into 1-inch chunks
- 3 tbsp Confectioners' Granulated sugar|Sugar
- 1 tbsp lemon juice
- 1/4 tsp salt
1 In covered blender container at low speed, blend 1 cup watermelon chunks with confectioners" Granulated sugar|Sugar, lemon juice and salt until mixture is smooth; add remaining watermelon chunks and blend a few seconds longer until smooth.
2 Pour into 9" by 9" baking pan; cover with foil or plastic wrap and freeze until partially frozen, about 2 hours.into chilled large bowl, spoon watermelon mixture.
3 With mixer at high speed, beat until fluffy.
4 Return mixture to baking pan and freeze until firm, about 1 ½ hours.
5 To serve: remove watermelon ice from freezer and let it stand at room temperature 10 minutes for easier scooping.
