White Wine Blue Cheese Pasta

Recipe Description

Makes 4 servings. Cooking time 20 minutes.

Ingredients

  • 100 grams blue cheese (Stilton cheese|Stilton, Gorgonzola, or Australian Roaring Forties)
  • 1½ cups white wine (dry white)
  • 2 medium onions, ¼ rings
  • 185 mL evaporated milk (Creamy carnation)
  • 2 cloves garlic, minced
  • pasta for 4 (fettucini recommended)
  • 1 tablespoon cornstarch|cornflour
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons oil

Directions

  1. Cook pasta while preparing sauce below.

  3. heat oil in saucepan
  4. add onions, brown thorough
  5. add garlic
  6. add wine gradually as onions start to stick to pan
  7. reduce heat, add blue cheese, melt
  8. add evaporated milk
  9. add salt and pepper (taste)
  10. thicken with cornstarch|cornflour (1-2 tablespoons in a little water, stir into mixture)
  11. drain cooked pasta
  12. stir sauce into pasta, serve immediately
