Zippy Shrimp and Rice
Recipe Description
Makes 6 servings.Ingredients
- 1 cup chopped onion
- 2 cloves garlic, minced
- 1 tablespoon butter or margarine
- 1 x 14½-ounce can peeled whole tomatoes, chopped
- 1 x 8-ounce can tomato sauce
- ½ cup water
- 1 teaspoon salt
- 1 teaspoon basil
- 1 teaspoon oregano
- 1 teaspoon prepared horseradish
- ¼ teaspoon ground black pepper
- 1 pound peeled and de-veined shrimp
- cheese (optional as garnish)
- Cook onion and garlic in butter in large skillet until tender.
- Add tomatoes, tomato sauce, water, salt, basil, oregano, horseradish and black pepper.
- Simmer 20 minutes or until slightly thickened.
- Stir in shrimp and cook 10 minutes longer. Serve over hot rice.
- Sprinkle with cheese, if desired.
