Classic Rice Salad II

Recipe Description

Makes 6 servings.


  • 3 cups cooked rice, cooled
  • 3 hard-cooked eggs, chopped
  • 1/2 cup reduced-calorie Mayonnaise
  • 1/2 cup finely chopped green onions
  • 1/2 cup chopped sweet pickles
  • 1 (2-ounce) jar pimientos, diced (1/4 cup)
  • 1 teaspoon prepared mustard
  • 1/4 teaspoon ground black pepper
  • lettuce leaves


Combine rice, eggs, Mayonnaise, onions, pickles, pimientos, mustard and pepper in large bowl. Toss to thoroughly combine. Serve on lettuce leaves.
