Baked Fish with Cheese Sauce

Recipe Description

A Scandinavian American way to prepare baked fish using white fish and a cheese sauce. Very easy and very good.

Ingredients

  • 1½ pounds fish fillets, use orange roughy, Dover sole|sole or snapper
  • ½ cup milk
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • salt and white pepper, to taste
  • 1 teaspoon dry sherry
  • ¼ pound Swiss cheese, shredded

Directions

  1. Preheat oven to 350°F to 375°F.
  2. Spray a baking dish with nonstick cooking spray.
  3. Add fish fillets to baking dish.
  4. Pour ½ cup milk over fish fillets.
  5. Bake 30 minutes, or until fish is cooked through.
  6. Make the white sauce by melting the butter, adding the flour, salt and pepper. Whisk in the 1 cup milk and cook until sauce is smooth and thickened. Keep warm.
  7. Whisk in the sherry.
  8. Remove baked fish from oven after the baking time has finished.
  9. Nap with white sauce.
  10. Sprinkle grated cheese over top of sauce and fish.
  11. Broil until golden.
