Crab Cakes Guyanese-style

Ingredients

  • ½ lb fresh crab meat
  • ¼ cup onion, minced
  • ¼ cup red bell pepper|red pepper,minced
  • 2 tbsp jerk spice
  • 2 tsp honey
  • ½ cup mayonnaise
  • 1 cup fresh bread crumbs
  • 3 tbsp butter
  • sweet lime salsa to serve

Directions

  1. In a small bowl, gently mix all the ingredients (except for the butter and salsa) until combined.
  2. Form into 12 crab cakes.
  3. Fry the crab cakes in butter over a moderate heat, until golden brown on both sides.
  4. Serve with the sweet lime salsa.
