Gluten-free Cupcakes

Recipe Description

Recipe makes 18 cupcakes.

Ingredients

  • 1? cup semi-sweet chocolate|semisweet chocolate morsels - Nestle <ref name=nestle>Nestle morsels are gluten-free.</ref>
  • ¾ cup unsalted butter, cut into pieces
  • six large eggs, separated
  • ½ cup granulated sugar|sugar, divided
  • 2 teaspoons gluten-free vanilla extract
  • sweetened whipped cream
  • mini chocolate chips - Nestle <ref name=nestle></ref>

Directions

  1. Heat oven to 350&nbsp;°F.
  2. Line 18 muffin cups with baking liners.
  3. Coat liners with vegetable cooking spray.
  4. Stir chocolate and butter in heavy saucepan over low heat until smooth.
  5. Remove from heat.
  6. Cool to lukewarm.
  7. In large bowl, with electric mixer on high, mix egg yolks and ¼ cup granulated sugar|sugar until very thick and pale, about three minutes.
  8. Fold in chocolate mixture and vanilla.
  9. Using clean, dry beaters, beat egg whites and remaining ¼ cup granulated sugar|sugar in bowl until stiff but not dry, about two minutes.
  10. Fold egg-white mixture into chocolate mixture until combined.
  11. Divide batter among baking liners.
  12. Bake 28 - 30 minutes.
  13. Cool completely.
  14. Serve with dollop of sweetened whipped cream and chips.
