Gluten-free Gingersnaps

Recipe Description

This is a special recipe made without gluten.
* Makes 40 cookies.

Ingredients

  • ¼ cup margarine
  • ½ cup granulated sugar|sugar
  • 2 tbsp molasses
  • 1 egg
  • ½ cup soy flour
  • ¼ cup cornstarch
  • ¼ cup potato starch|potato starch flour
  • ¼ tsp salt
  • 1 tsp baking soda
  • ¼ tsp ginger
  • ½ tsp cinnamon

Directions

  1. Preheat oven to 350 °F.
  2. Sift dry ingredients together.
  3. Cream margarine and granulated sugar|sugar together thoroughly.
  4. Beat in egg and molasses.
  5. Add flour mixture.
  6. Mix well.
  7. Drop rounded teaspoons of dough onto greased cookie sheet.
  8. Bake for 10 to 12 minutes.
