Lamingtons

Ingredients

  • 3 eggs
  • ½ cup superfine sugar|castor sugar
  • ¾ cup self rising flour
  • ¼ cup cornstarch|cornflour
  • 15g (½ oz) butter
  • 3 tablespoons hot water

Directions

  1. Beat eggs until thick and creamy.
  2. Gradually add granulated sugar|sugar.
  3. Continue beating until granulated sugar|sugar completely dissolved.
  4. Fold in sifted self rising flour and cornstarch|cornflour, then combined water and butter.
  5. Pour mixture into prepared lamington tins 18 cm x 28 cm (7in x 11in).
  6. Bake in moderate oven approximately 30 minutes.
  7. Let cake stand in pan for 5 minutes before turning out onto wire rack.
