Low-fat Cherry Cookies

Ingredients

  • 1? cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 5 tbsp unsalted butter, softened
  • ¾ cup granulated sugar|sugar or wikipedia:Splenda|Splenda
  • ¼ cup Egg Beaters or other fat-free egg substitute
  • 1 tsp vanilla extract
  • cherry jam (sugar free if desired)
  • 16 whole cherry|cherries, fresh or frozen (no added sugar)

Directions

  1. Preheat oven to 375°F.
  2. Chop fresh or frozen cherries.
  3. In a small bowl, stir together flour and baking powder.
  4. In a large bowl, mix the butter and sugar until smooth then beat in egg and vanilla.
  5. Slowly blend in the dry ingredients.
  6. Form dough into 1½ inch balls, and place onto ungreased cookie sheets.
  7. Scoop on ½ teaspoons of cherry jam and ½ teaspoon of chopped cherries.
  8. Bake 8 to 10 minutes in the preheated oven, or until golden.
  9. Let stand on cookie sheet two minutes before removing to cool on wire racks.
