Never-fail Hollandaise Sauce
Ingredients
- 4 egg yolks
- 1 cup butter or margarine, melted
- ½ tsp salt
- pinch cayenne
- 2 tbsp lime juice
- Over low heat, melt butter or margarine and allow to cool.
- Beat egg egg yolk|yolks until thick and lemon-colored.
- Add salt and Cayenne.
- Gradually add melted butter, while beating briskly by hand, or on high speed in electric beater, blending each addition well before the next.
- Alternate with teaspoonfuls of lime juice and continue until smooth.
