Apricot-Pecan Rice Stuffing
Recipe Description
Use as a stuffing for roast duck or pork chops or as a side dish. Makes 6 servings.Ingredients
- 1 cup chopped dried apricots
- ½ cup boiling chicken broth
- 2 cups sliced celery
- 1 cup sliced green onions
- 2 tablespoons butter or margarine
- 3 cups cooked rice
- ½ cup chopped pecans
- 1½ teaspoons poultry seasoning
- salt and ground black pepper to taste
- Soak apricots in broth; set aside.
- Cook celery and onions in butter in large skillet until tender crisp.
- Add rice, pecans, poultry seasoning, salt, pepper, apricots and broth; mix well.
- If using as a side dish, bake in baking dish at 350 °F for 20 minutes.
