Sautéed Crumb-crusted Shad with Marinara Sauce and Basil

Ingredients

  • shad filet
  • 2 cups seasoned fine breadcrumbs
  • ½ tsp dried oregano
  • ¼ cup olive oil
  • ==
  • 1 onion, minced
  • 2 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 6 very ripe tomatoes, chopped and seeded
  • 1 bouquet garni:
  • parsley stems
  • thyme
  • 2 bay leaf|bay leaves
  • 1 tsp granulated sugar|sugar
  • salt and pepper to taste
  • fresh chopped basil

Directions

  1. Combine all ingredients for marinara sauce except fresh basil, and simmer for ½ hour.
  2. Mix bread crumbs, olive oil, and oregano, together. Dip shad into bread crumb mixture. Sauté in hot oiled skillet until golden brown.
  3. Place hot marinara sauce on platter and sprinkle with fresh basil.
  4. Add sautéed shad on top of marinara.
  5. Sprinkle with additional fresh basil.
