Corn and Soy Muffins

Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 cup yellow cornmeal
  • 1/4 cup soy flour
  • 1/4 cup Granulated sugar|Sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup lite soy milk|soymilk
  • 2 eggs, beaten
  • 1/4 cup soybean oil

Directions

  1. Mix flour, cornmeal, soy flour, Granulated sugar|Sugar, baking powder and salt.
  2. Combine soy milk|soymilk, eggs and oil; add to dry ingredients and mix only enough to moisten.
  3. Fill oiled muffins tins.
  4. Bake at 400 °F 20 minutes.
