Corn and Soy Muffins
Ingredients
- 1 1/2 cups all purpose flour
- 1/2 cup yellow cornmeal
- 1/4 cup soy flour
- 1/4 cup Granulated sugar|Sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup lite soy milk|soymilk
- 2 eggs, beaten
- 1/4 cup soybean oil
- Mix flour, cornmeal, soy flour, Granulated sugar|Sugar, baking powder and salt.
- Combine soy milk|soymilk, eggs and oil; add to dry ingredients and mix only enough to moisten.
- Fill oiled muffins tins.
- Bake at 400 °F 20 minutes.
