Cottage Cheese and Leeks

Ingredients

  • 2 CUPS CHOPPED FRIED leeks
  • 1 Tbsp. butter
  • 2 eggs
  • 1/2 tsp. salt
  • 1 lb. dry cottage cheese

Directions

  1. Chop 2 cups leeks and remove stems; simmer in butter covered in frying pan; add salt and remove from burner.
  2. Cool slightly and add cottage cheese and eggs; stir well. Cool before using.
