Cream Cheese Rhubarb Pie

Ingredients

  • ¼ cup cornstarch
  • 1 cup granulated sugar|sugar
  • 1 pinch salt
  • ½ cup water
  • 3 cups sliced fresh or frozen rhubarb; in ½" pieces
  • 1 pie shell; nine inch, unbaked

  • 1 package (8-oz) cream cheese
  • ½ cup water
  • whipped cream
  • sliced almonds

Directions

  1. In a saucepan, combine the cornstarch, granulated sugar|sugar and salt.
  2. Add water and stir until well combined.
  3. Add rhubarb.
  4. Cook, stirring often until mixture boils and thickens.
  5. Pour into pie shell.
  6. Bake at 425 °F. for 10 minutes.
  7. Meanwhile for topping, beat cream cheese, eggs and granulated sugar|sugar until smooth.
  8. Pour over pie.
  9. Reduce heat to 325 °F.
  10. Bake for 35 minutes or until set.
  11. Chill several hours or overnight.
  12. Garnish with shipped cream and almonds.
