White Christmas (Australian)

Ingredients

  • 250 g copha (solidified coconut oil)
  • 3 cups rice crispies|rice bubbles
  • 1 cup desiccated coconut|dessicated coconut
  • ¾ cup powdered sugar|icing sugar
  • 1 cup powdered milk|milk powder
  • ¼ cup golden raisin|sultanas
  • 30 g candied apricot|glacé apricots, chopped
  • 30 g candied pineapple|glacé pineapple, chopped
  • 30 g candied cherries|glacé cherries, chopped
  • 30 g mixed peel, optional
  • 30 g crystallized ginger|preserved ginger, optional

Directions

  1. Melt chopped copha over a gentle heat, combine rice crispies|rice bubbles, desiccated coconut|dessicated coconut, sifted powdered sugar|icing sugar, powdered milk|milk powder and all fruits, mix well.
  2. Add melted copha and mix thoroughly.
  3. Press mixture into a lightly greased and paper-lined Lamington tin.
  4. Refrigerate until firm, cut into squares for serving.
