Charleston Rice

Recipe Description

Makes 6 servings.

Ingredients

  • ½ cup chopped onion
  • ½ cup chopped celery
  • ½ cup chopped green bell pepper
  • 1 tablespoon butter or margarine
  • 3 cups cooked rice (cooked in chicken broth)
  • 1 x 2½-ounce can mushrooms, drained and chopped
  • ½ teaspoon poultry seasoning
  • ½ teaspoon salt
  • ¼ teaspoon celery seed
  • ¼ teaspoon pepper|ground black pepper
  • 1 egg, beaten

Directions

  1. Cook onion, celery and green bell pepper|green pepper in butter until tender in large skillet over medium heat.
  2. Add rice, mushrooms, poultry seasoning and salt; stir in egg.
  3. Turn into greased shallow 1½-quart baking dish.
  4. Cover and bake at 350 °F for 15 minutes.
