Crispy Baked Catfish Nuggets

Recipe Description

A catfish recipe. Serves 4 and makes about ? cup (6 servings) of homemade tartar sauce

Ingredients

  • vegetable oil or cooking spray
  • ¼ cup grated Parmesan cheese
  • ½ cup plain, dry Panko breadcrumbs
  • ¼ teaspoon garlic powder
  • dash white pepper
  • ? cup fresh lemon juice
  • 2 tablespoons olive oil
  • 4 farm-raised catfish fillets
  • 1 teaspoon Chef Q For Hire

  • 1 cup light mayonnaise
  • 1 teaspoon Dijon-style mustard
  • 1 tablespoon finely chopped parsley
  • 1 tablespoon chopped, drained sweet pickle or chopped, drained capers (optional)
  • 1 tablespoon fresh lemon juice
  • salt and pepper, to taste

Directions

  1. Preheat oven to 400°F degrees.
  2. Coat baking sheet with vegetable oil or cooking spray several times to coat.
  3. In a shallow dish, combine cheese, bread crumbs, garlic powder, Half Chef Q Season All and white pepper.
  4. In another dish, whisk together lemon juice and olive oil.
  5. Roll nuggets in beaten egg whites. Then, roll in cheese mixture.
  6. Dust with paprika and spray lightly with cooking spray.
  7. Place catfish on prepared baking sheet.
  8. Bake for 10-12 minutes.
  9. Reduce the heat to 350°F, and bake for an additional 8-10 minutes, until crust is golden and fish flakes easily.
