Cucumber Ribbon Salad

Recipe Description

Do not let dressed cucumber salad stand more than 20 minutes before serving, or it will become soggy.
* This recipe is for 4 servings.
* Preparation: 15 minutes.


  • ¼ cup seasoned rice vinegar
  • ½ teaspoon granulated sugar|sugar
  • 1 teaspoon soy sauce
  • ½ teaspoon sesame oil
  • 1½ English cucumber, halved crosswise (1¼ lb total)


  1. Bring vinegar and granulated sugar|sugar to a simmer, stirring until granulated sugar|sugar is dissolved, then cool to room temperature.
  2. Stir in soy sauce and sesame oil.
  3. Cut cucumber lengthwise into ?-inch-thick ribbons using a mandolin or other manual slicer.
  4. Toss cucumber with dressing and let stand 5 minutes before serving.
