Fat-free Pumpkin Raisin Cake

Recipe Description

Makes 1 cake and about ½ cup sauce.

Ingredients

  • non-stick cooking spray
  • 1? cup flour
  • ? cup sugar
  • ¼ cup nonfat dry milk
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 2 tsp pumpkin pie spice
  • ½ cup raisins
  • 2 egg whites
  • 1 cup canned solid-pack pumpkin
  • ? cup corn syrup, light or dark
  • ? cup orange juice
  • fat-free cream sauce
  • 1 cup non-fat vanilla yogurt
  • ½ cup confectioners' sugar

Directions

  1. Spray 9-inch square baking pan with cooking spray.
  2. In large bowl combine dry ingredients; stir until smooth.
  3. Pour into prepared pan.
  4. Bake in 350 °F oven 35 minutes or until toothpick inserted in center comes out clean.
  5. Cool in pan on wire rack.
  6. If desired, serve with fat-free yogurt cream sauce.

  8. Line a strainer with paper coffee filter or cheesecloth layers.
  9. Add yogurt, set over bowl and refrigerate 4 hours.
  10. Discard drained liquid.
  11. Combine thickened yogurt and sifted confectioners' sugar; stir until smooth.
