Finnish Creamy Pea Soup

Ingredients

  • 4 cups dried green split peas|split green peas, washed
  • 8 cups water
  • 3 tablespoons butter, melted
  • 1 tablespoon prepared mustard|prepared hot mustard
  • salt and pepper
  • ½ cup light whipping cream|whipping cream (35%)

Directions

  1. Soak pea overnight.
  2. Rinse and drain.
  3. In a large pot, bring peas and water to boil over high heat and reduce to simmer until tender (60min).
  4. Puree the soup and add butter, sal tand pepper, and mustard.
  5. Cook, stirring oftne over medium heat, 10 minutes.
  6. Adjust seasoning.
  7. Serve with light whipping cream|whipping cream.
