Garden Melange with Rice

Recipe Description

Makes 6 servings.

Ingredients

  • 1½ cups (8-ounces) firm tofu, drained and finely chopped
  • ½ cup chopped celery
  • ½ cup sliced radishes
  • ? cup sliced green onions
  • 2 cloves garlic, minced
  • 2 tablespoons diet margarine
  • 2 cups cooked rice
  • 1¼ cups (8-ounces) grated Cheddar cheese, divided
  • 1 teaspoon salt (optional)
  • ¼ teaspoon ground black pepper

Directions

  1. Cook tofu, celery, radishes, onion and garlic in margarine in large skillet until vegetables are tender crisp.
  2. Add rice 1 cup cheese, salt and pepper. Cover; cook over medium heat 10 minutes or until heated through, stirring occasionally.
  3. Sprinkle with remaining ¼ cup cheese.
  4. Cover; cook 3 minutes longer, or until cheese is melted.
