Garden Vegetable Salad

Ingredients

  • 3 cups cooked rice (cooked in chicken broth), cooled
  • 1½ cups sliced celery
  • 1 cup sliced green onions
  • ½ cup sliced radishes
  • ? cup mayonnaise
  • ? cup sour cream
  • 1½ tablespoons tarragon vinegar
  • 1 teaspoon prepared mustard
  • 1 teaspoon dried dill|dill weed
  • lettuce leaves (optional)
  • cherry tomatoes for garnish (optional)

Directions

  1. Combine rice, celery, green onions and radishes.
  2. Blend mayonnaise, sour cream, vinegar, mustard and dill|dill weed.
  3. Add to rice mixture; toss lightly.
  4. Serve on lettuce leaves and garnish with cherry tomatoes, if desired.
