Gluten-free Basic Biscuits

Ingredients

  • 1 cup sorghum flour
  • ¾ cup gluten-free flour blend
  • ¼ cup sweet rice flour
  • 1 teaspoon xanthan|xanthan gum
  • 2 teaspoons granulated sugar|sugar
  • 3 teaspoons baking powder
  • ½ teaspoon cream of tartar
  • ¼ teaspoon salt
  • ½ cup shortening -- cubed
  • 1 egg
  • ½ cup milk

Directions

  1. Crack egg into large measuring cup.
  2. Add milk to make ? cup of liquid.
  3. Lightly beat together.
  4. Set aside.
  5. Sift all dry ingredients.
  6. Place in food processor.
  7. Pulse in cubed shortening.
  8. Add milk-egg mixture.
  9. Pulse until dough is formed.
  10. Wrap dough in plastic wrap and chill 1 hour or overnight, or roll or pat it out right away and use a biscuit cutter to cut biscuits.
  11. Place on baking sheet and bake at 450 °F for 10 minutes.
  12. Brush melted butter on biscuits the last couple of minutes of baking, if desired.
  13. This helps them to brown a little bit better.
