Gluten-free Chocolate Biscuits

Recipe Description

Recipe makes 20 biscuits

Ingredients

  • 1 ounce cocoa|cocoa powder
  • 2 ounces potato starch|potato flour
  • 2 ounces rice flour
  • 1 ounce chickpea flour|gram flour
  • 1 ounce almond meal|ground almonds
  • 3 ounces granulated sugar
  • 3 ounces hard margarine or butter
  • 1 egg

Directions

  1. Preheat oven to 350 °F.
  2. Mix all the dry ingredients together.
  3. Beat the egg before adding with the butter and mix together until a soft dough is produced that sticks into a large ball.
  4. Break the dough into walnut-sized pieces and place on a greased tray or nonstick baking parchment.
  5. Flatten each lump with the back of a fork dipped in cold water.
  6. Bake for 12 - 15 minutes.
  7. Cool on a wire rack.
  8. Variations: add chopped nuts or crystallized ginger.
