Golden Rice with Hot Chicken Salad

Ingredients

  • 1 cup uncooked rice
  • ? cup butter or margarine
  • 2 cups chicken broth
  • ? teaspoon saffron
  • 1 cup grated Cheddar cheese

  • 2 cups diced cooked chicken
  • 1 cup diced celery
  • 2½ tablespoons minced onion
  • ½ cup finely chopped chutney
  • 1 cup cooked peas
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ½ cup French dressing

Directions

  1. Cook onion and rice in butter until rice is golden.
  2. Add broth and saffron; heat to boiling. Stir once.
  3. Cover, reduce heat, and simmer for 15 minutes or until liquid is absorbed.
  4. Add cheese and toss lightly.
  5. Spoon into buttered 8-inch ring mold.
  6. Place mold in pan of hot water for about 10 minutes.
  7. Unmold onto platter and fill with #Hot chicken salad|Hot chicken salad.

  9. Combine chicken, celery, onion, chutney, peas, salt, pepper and dressing.
  10. Toss lightly.
  11. Spoon into casserole and bake at 450 °F for 20 minutes, or until hot.
