Golden State Chicken-Rice Salad
Recipe Description
Makes 6 servingsIngredients
- 3 cups cooked rice, cooled
- 2 cups chopped cooked chicken
- 1 cup sliced celery
- ¼ chopped red onion
- 5 slices crisp-cooked bacon, crumbled
- 1 cup mayonnaise
- 2 ounces blue cheese, crumbled
- 2 tablespoons milk
- ½ teaspoon salt
- ? teaspoon ground black pepper
- 2 medium tomatoes, cut into thin wedges
- 2 medium avocados, peeled and cut into thin wedges
- ¼ cup alfalfa sprouts (optional)
- Combine rice, chicken, celery, onion and bacon.
- Blend mayonnaise, cheese, milk, salt and pepper.
- Line serving plate with leafy lettuce, if desired.
- Spoon rice mixture in center.
- Arrange tomatoes and avocados spoke fashion around edge of plate.
- Top with dressing.
- Sprinkle with sprouts.
