Black Bean and Rice Medley

Recipe Description

Makes 6 servings.


  • 3 cups cooked rice
  • 1 x 16-ounce can black beans, drained and rinsed
  • 1 large tomato, seeded and chopped
  • ½ cup (2 ounces) shredded Cheddar cheese (optional)
  • 4 green onions, chopped
  • ? cup prepared light Italian salad dressing|dressing
  • 1 tablespoon lime juice (optional)


  1. Combine rice, black beans|beans, tomato, cheese and onions in large bowl.
  2. Pour dressing and lime juice over rice mixture and toss.
  3. Serve at room temperature or chilled.
