Bleu Cheese Rice Salad

Recipe Description

Makes 6 servings.


  • 3 cups hot cooked rice
  • 1 cup chopped celery
  • 1/4 cup chopped pimientos
  • 1 tablespoon grated Onion
  • 3 hard-cooked eggs, chopped
  • 1/4 cup chopped nut meats
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup sour cream
  • 1/4 cup crumbled bleu Cheese
  • 1 tablespoon lemon juice
  • 1/2 teaspoon seasoned salt (optional)


Combine rice, celery, pimientos, Onion, eggs, nuts, salt and pepper; toss lightly. Blend sour cream with Cheese, juice and seasoned salt. Fold into rice mixture. Turn into mold and chill thoroughly. Unmold before serving.
