Haitian Garlic Soup
Ingredients
- 12 to 18 cloves garlic
- 1 c. olive oil
- sprig of thyme
- 1 egg
- 11/2 qt. water or broth
- salt and pepper
- stale bread
- dash vinegar
- Boil garlic and thyme 20 minutes in water or broth.
- Beat egg at high speed adding oil in a slow steady stream.
- Add this mixture to soup, heating it first gradually with tablespoons of hot soup.
- Add vinegar. Pour into plates over slices of stale or oven-dried bread.
