Haitian Garlic Soup


  • 12 to 18 cloves garlic
  • 1 c. olive oil
  • sprig of thyme
  • 1 egg
  • 11/2 qt. water or broth
  • salt and pepper
  • stale bread
  • dash vinegar


  1. Boil garlic and thyme 20 minutes in water or broth.
  2. Beat egg at high speed adding oil in a slow steady stream.
  3. Add this mixture to soup, heating it first gradually with tablespoons of hot soup.
  4. Add vinegar. Pour into plates over slices of stale or oven-dried bread.
