Haitian Tomato Salad

Ingredients

  • tomatoes
  • salt and pinch of Granulated sugar|Sugar
  • vinaigrette, parsley
  • chopped shallots

Directions

  1. Peel desired number of tomatoes.
  2. This can be done easily by plunging each tomato in boiling water, then into iced water for a few seconds.
  3. Peel tomatoes. If they have a lot of seeds and liquid, press them out.
  4. Slice and sprinkle with salt and pinch of Granulated sugar|Sugar (optional).
  5. Drain after half an hour and season with vinaigrette, parsley and chopped shallots. Chill.
