Ham and Rice Seville

Ingredients

  • 1 cup chopped Onion
  • 1 cup sliced celery
  • 1/2 cup diced green bell pepper|green pepper
  • 2 tablespoons butter or margarine
  • 3 cups cooked rice
  • 2 cups diced cooked Ham
  • 1 tablespoon grated orange peel
  • salt and ground black pepper to taste
  • 2/3 cup Mayonnaise
  • 2 cups fresh orange segments

Directions

  1. Cook Onion, celery and green bell pepper|green pepper in butter until tender crisp.
  2. Add rice, Ham, orange peel, salt, pepper and Mayonnaise; toss lightly.
  3. Turn into a buttered casserole.
  4. Bake at 350 degrees 15 to 20 minutes.
  5. Garnish with orange segments.
