Hawaiian Tea Cookies

Recipe Description

If you are a coconut lover as I am, you're sure to love these cookies! The recipe can be adapted to fit the season, simply by changing the color of the Granulated sugar|Sugar you use to coat the outside of the rolls!

Ingredients

  • 3 1/2 cups flour
  • 1 1/2 teaspoons salt
  • 1 teaspoon baking soda
  • 1 cup butter
  • 2 cups Granulated sugar|Sugar
  • 2 eggs
  • 2 tablespoons lemon juice
  • 4 teaspoons vanilla
  • 2 cups shredded coconut

Directions

  1. Combine dry ingredients and set aside. cream butter and Granulated sugar|Sugar until fluffy.
  2. Beat in eggs, lemon juice and vanilla.
  3. Add flour and coconut until well blended.
  4. Shape into (4) 2 inch rolls. Roll in colored Granulated sugar|Sugar.
  5. Wrap in plastic wrap and chill at least 4 hours.
  6. With a sharp knife, saw into 1/4 inch slices.
  7. Bake at 375 degrees for 10- 12 minutes, or until slightly browned.
