Hawaiian Turkey Salad

Recipe Description

Makes 6 servings

Ingredients

  • 3 cups cooked brown rice
  • 2 cups cooked turkey meat|turkey cubes
  • 1 x 8-ounce can pineapple chunks in juice (drain; reserve 1 tablespoon juice)
  • 1 x 8-ounce can sliced water chestnuts, drained
  • 1 medium unpeeled apple, cored and chopped
  • ? cup chopped macadamia nuts
  • ½ teaspoon salt
  • ½ cup (4 ounces) plain yogurt
  • lettuce leaves
  • ¼ cup shredded coconut, toasted, for garnish

Directions

  1. Combine rice, turkey meat|turkey, pineapple, water chestnuts, apple, nuts and salt in large bowl.
  2. Toss lightly with yogurt and 1 tablespoon pineapple juice.
  3. Serve on lettuce leaves; garnish with coconut.
