Hawaiian Turkey Salad
Recipe Description
Makes 6 servingsIngredients
- 3 cups cooked brown rice
- 2 cups cooked turkey meat|turkey cubes
- 1 x 8-ounce can pineapple chunks in juice (drain; reserve 1 tablespoon juice)
- 1 x 8-ounce can sliced water chestnuts, drained
- 1 medium unpeeled apple, cored and chopped
- ? cup chopped macadamia nuts
- ½ teaspoon salt
- ½ cup (4 ounces) plain yogurt
- lettuce leaves
- ¼ cup shredded coconut, toasted, for garnish
- Combine rice, turkey meat|turkey, pineapple, water chestnuts, apple, nuts and salt in large bowl.
- Toss lightly with yogurt and 1 tablespoon pineapple juice.
- Serve on lettuce leaves; garnish with coconut.
