Brazilian Black Bean Soup

Ingredients

  • 2 cups black beans
  • 3½ cups water or stock
  • 2 tsp salt
  • 1 cup chopped onion
  • 1 cup chopped carrot
  • 1 cup chopped celery
  • 6 cloves garlic, chopped
  • 3 tbsp cumin
  • 3 tbsp crushed coriander seeds
  • 2 peeled, sectioned, deseeded oranges
  • ½ cup orange juice
  • 1 tbsp sherry
  • 1 lemon, juice of
  • 1 tbsp black pepper
  • 1 tbsp red pepper

Directions

  1. Wash the beans and soak, them , covered, for 4 hours.
  2. Drain and add water or stock.
  3. Add salt.
  4. Bring to a boil and then simmer, covered, for 1½ hours.
  5. Sautee the vegetables and garlic.
  6. Add cumin and corriander.
  7. Cook until vegetables are soft, adding water if needed.
  8. Add veggies to cooking beans.
  9. About 10 minutes before beans are ready add the oranges, orange and lemon juice, sherry, black and red pepper.
  10. Stir, cover, cook 10 more minutes.
