Imperial Pork Salad

Ingredients

  • 3 cups cooked rice
  • 2 to 3 cups cooked roast Pork cubes* (about 3/4 pound)
  • 1 10-ounce package frozen garden pea|green peas, thawed
  • 1 cup sliced celery
  • 1 4-ounce can sliced Mushrooms, drained
  • 1/4 cup chopped pimientos
  • 1/2 cup sour cream
  • 1/2 cup Mayonnaise
  • 1 teaspoon salt
  • 1 teaspoon seasoned pepper
  • 2 teaspoons lemon juice
  • lettuce leaves
  • peach halves for garnish (optional)

Directions

  1. Combine rice, Pork, Peas, celery, Mushrooms and pimientos in large bowl.
  2. Blend sour cream, Mayonnaise, salt and pepper; toss with rice mixture. Chill.
  3. Serve on lettuce leaves; garnish with peach halves, if desired.
