Imperial Pork Salad
Ingredients
- 3 cups cooked rice
- 2 to 3 cups cooked roast Pork cubes* (about 3/4 pound)
- 1 10-ounce package frozen garden pea|green peas, thawed
- 1 cup sliced celery
- 1 4-ounce can sliced Mushrooms, drained
- 1/4 cup chopped pimientos
- 1/2 cup sour cream
- 1/2 cup Mayonnaise
- 1 teaspoon salt
- 1 teaspoon seasoned pepper
- 2 teaspoons lemon juice
- lettuce leaves
- peach halves for garnish (optional)
- Combine rice, Pork, Peas, celery, Mushrooms and pimientos in large bowl.
- Blend sour cream, Mayonnaise, salt and pepper; toss with rice mixture. Chill.
- Serve on lettuce leaves; garnish with peach halves, if desired.
