Lebanese Bean Salad

Salad with beans

Ingredients

  • 1 can red kidney beans
  • 1/2 cups Parsley, chopped or dried
  • 1 tbls minced Onion, soaked in 1/3 c. water
  • 2 tspn dried mint
  • 1 tomato, chopped
  • 1 cucumber, peeled & diced
  • 1/4 cups olive oil
  • 1/4 cups lemon juice
  • 1/2 tspn salt
  • 1/2 tspn pepper
  • 1 package of pita bread, cut into fourths

Directions

Place beans, Parsley, drained Onion, mint, tomato and cucumber into serving bowl.
Combine olive oil, lemon juice, salt and pepper and beat with a fork.
Pour over vegetables, mix thoroughly.
Refrigerate until ready to serve.
Mix again before serving.
Serve with pita.
